Gorgonzola-pear butter

It's easy. Mash together some butter, pears and gorgonzola until you get something that's nicely-spreadable at room temperature. We put it on apple juice and sage-marinated pork chops but it's also to die for on butter crackers. Try serving it with some hard apple cider.

How to Bake a Greek One Meal Pie
Here's how to make a meal in one pie popular in the Greek islands.




Ingredients
1 pizza crust sprinkled with extra virgin olive oil
1 cup of ricotta cheese and 1 cup of feta cheese
1 cup of black olives
1 cup of clean, chopped raw spinach
2 cups of diced tomatoes (low-acid type)
1/2 cup of diced onions sauteed in olive oil
2 cloves of minced or chopped raw garlic
1/4 cup lemon juice
1 cup yogurt
1 chopped, peeled cucumber.
2 table spoons mayonnaise or mayonnaise substitute.
Steps
Bake the pizza crust according to your recipe or package directions
In a small bowl, mix the yogurt with the mayonnaise and add the chopped cucumber to the sauce.
In a medium bowl, mix the chopped spinach with the ricotta cheese and add the feta cheese to the cheese and spinach mixture
Spread the mayonnaise and yogurt mixture/sauce over the already baked pizza crust first.
Put all the ingredients on top of the mayonnaise-yogurt-cucumber-cheese-spinach mixture on the already baked, crispy, crunchy pizza crust. Top with layers of diced tomatoes, onions, and garlic, and put under the broiler until the cheese heats and begins to melt. Serve slices warm with olives, tomatoes, and diced cucumber.
